Healthy Medifast Meal Recipes For the Holidays

Medifast is a nutrition plan that contains combined low-fat protein and healthy fiber that you had to follow to get the results that you want, which is to lose weight.  Medifast promotes the Lean & Green Meal which includes 5 to 7 ounces of lean protein plus 3 servings of vegetables and up to two servings of healthy fats, depending on your lean protein choices.

And since holidays are just around the corner, who says eating healthy is never fun nor part of the menu that will be prepared on the dining table on these occasions? Here are some Lean & Green Meal recipes to choose from:

  1. Spicy Garlic Lime Shrimp

Ingredients:

  • .80 kilos or 1.75 pounds of large raw shrimp (peeled and de-veined)
  • 3pcs of 8 ounce package House Shirataki brand angel hair noodles
  • 1 cup of diced fresh or canned tomatoes
  • ½ cup chopped green peppers
  • 2 tablespoons of olive oil
  • 1 tablespoon of lime juice
  • 1 pressed glove garlic

(For the Seasoning Blend)

  • ¼ teaspoon of salt
  • ¼ teaspoon of ground black pepper
  • ¼ teaspoon of cayenne pepper
  • ¼ teaspoon of dried parlsey flakes
  • ¼ teaspoon of garlic powder
  • ¼ teaspoon of paprika
  • 1/8 teaspoon of onion powder

Directions:

  • Make seasoning blend by mixing all the spices in a small bowl.
  • Drain liquid from the angel hair noodles.
  • Stir pressed garlic in a pan with olive oil for a few minutes then add shrimp, green bell peppers and lime juice. Then add the seasoning blend over the shrimp and peppers while stirring. Saute for 3 to 6 minutes.
  • Add the noodles and cook for about 2 to 4 minutes till shrimp becomes brown and peppers become tender.
  • Remove them from heat and toss with the tomatoes.
  • Let it cool before serving.

– This recipe is good for 3 servings and only contains 340 calories.

  1. Spicy Tilapia with Spinach

Ingredients:

  • .30 kilos or .60 pounds of raw tilapia
  • 3 cups of fresh spinach
  • 1 cup of diced canned tomatoes
  • 2 teaspoon of olive oil
  • ¾ teaspoon of paprika
  • ¼ teaspoon of red pepper flakes
  • ¼ teaspoon of garlic powder
  • ½ teaspoon of hot sauce

Directions:

  • Mix paprika, red pepper flakes, garlic powder, and hot sauce.
  • Brush olive oil over the tilapia and coat the seasoning to the fish afterwards.
  • Lay flat the tilapia on a pan and place the tomatoes and spinach over the tilapia.
  • Bake for 30 minutes in an oven with 175 degrees Celsius temperature.
  • Let it cool before serving.

– This is good for only one serving and contains 410 calories.

  1. Greek Style Swordfish Kabobs

Ingredients:

  • .45 kilos or 1 pound of swordfish, cut into chunks
  • 2 cups zucchini, halved and cut into ¾ pieces
  • 1 cup of cherry tomatoes
  • 1 cup of green bell pepper, cut into ¾ pieces

Marinade:

  • 2 teaspoon olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon water
  • ½ teaspoon ground oregano
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 finely minced garlic clove

Directions:

  • Whisk garlic, olive oil, lemon juice, water, oregano, salt and black pepper.
  • In a big resealable plastic bags, place the swordfish, tomatoes and zucchini together with the marinade mix. This goes to the refrigerator for 2 hours or overnight.
  • Thread kabobs with swordfish, tomatoes, zucchini and green peppers to be grilled for 5 to 10 minutes.

– This is good for 2 servings and contains 380 calories.
